Red Claw Seafood Classes

We discovered many people don’t know how to prepare seafood on their own, from how to safely store the animals, to humanely putting them to sleep, and how to prepare them. This stops people from being able to buy, cook and enjoy seafood at home.

  • Information online isn’t as clear or useful,
  • a lot of it is text-only bullet-point lists,
  • and some people were looking for videos to follow along with.

We created this series with friends of Red Claw to show you how to best do it on your own.

In this video, Dan Hong introduces three different types of Australian Crabs.

  • Spanner Crab
  • Snow Crab
  • Mud Crab

How to Prepare a Crab

In this video, Dan Hong guides you through preparing a crab for the first time.

Storage:

  • To keep the crab calm, leave it in a cool quiet area, like a bathtub or the laundry.

Ice Slurry Instructions:

  • 1/2 Water & 1/2 Ice in Large Container
  • Before Preparing, fully submerge into ice slurry for 20 minutes.
  • After removing from Ice Slurry, check for movement.

Preparing Your Crab:

  • Using a Large Knife or Cleaver, Turn Crab upside down and cut from the centre to the base.
  • Rotate and Cut toward the top. In both cases avoiding the shell.

  • Green Shallots (Cut into Batons)

  • Chinese Cooking Wine
  • Sesame Seed Oil
